Just as the new season brings new fashion and change in the air, so do the flavours of the new gourmet menu at Olive Bar & Kitchen - Bandra. Constantly striving towards culinary perfection this October Olive aims to do no less.
AD Singh, partner and the main face behind the Olive Bar & Kitchen, who is also one of the cities best known figures in the fields of leisure and restaurants, has over the last fifteen years been at the forefront of the lifestyle revolution sweeping the country. His restaurants and other ventures have been the trendsetters for these industries, resulting in a sound reputation, credibility and goodwill. He takes utmost care to keep his clients happy and coming back for more.
Talking on the occasion of the official launch of the new menu, AD Singh says, “With the end of the rains, our Chefs have so much more to work with. From sea food to produce, there is plentiful supply and variety available again and that is what this new menu serves up.”
The new menu is specially designed by celebrated senior Italian Chef - Chef Massimiliano Orlati, fondly known as Chef Max, who says, “This new and exiting menu is based on winter which brings with it the freshness of sea food; which I like to cook more then anything else. Sea food has always been my passion I love it! Every time I cook sea food it's like a journey through my life as I lived most of it by the sea. The flavor of the fresh fish brings to my senses the invigorating smell of the sea, the sandy beach and the sun. Especially for the new menu, we have sourced new spices like black pepper which grows only every two years from Goa, very spicy Pink Himalayan Salt Chilly from Bihar and Italian lemon and flat parsley.”
In keeping with the well-established quality and standards that Olive has created over the years, this new menu too promises to scintillate your taste buds and keep you wanting more. A new selection of antipasti such as – Four Cheese Fondue – served with herbed croutons, Jalapeño Salad - a mix of rocket & crispy lettuce with Spanish pickle jalapeños and extra virgin jalapeño dressing, Sweet Corn Feta Soup made from fresh corn with Greek feta cheese, herbed croutons and chilly oil, and the Lebanese classic – Hummus and Falafel with hot falafel thaina sauce and toasted sesame seeds, are lavishly presented just for you.
As the Mediterranean spread continues to unfold, for the main course Chef Max has crafted an assortment of organic delicacies. Farfalle Primavera made with butterfly pasta shape sauté of fresh mix organic vegetable, basil, extra virgin olive oil, parmesan cheese and garlic cream; Papadelle Duck - hand made Papadelle pasta with duck ragu - one of Chef Max’s favourite pasta; Fresh Whole Black Pomfret which is cooked under rock salt & deboned at your table, served with extra virgin vinaigrette, organic garden greens & mash potato, Chef Max’s tip “this is the healthiest & most natural way to eat fish.” and Lobster Gratin - Grill Fresh baby lobster with lemon sauce and variety of garnishes.
And last but definitely not the least – dolci! Chef Max unveils a host of scrumptious desserts like Rose Pannacotta with Jasmine Tea Jelly – made with special food essence from France, India and China and for those who are calorie conscious there is Sugar – free Cheese Cake.
Olive, Bandra’s new menu brings together ingredients from all around the world like Calamata Olive Oil from Greece, special Black Pepper from Goa, Lemon and flat Parsley from Italy, and Salt Chilli from Bihar among others. Being in the limelight for creating gourmet art, the new dishes are inspired by surroundings, colours, herbs and scents.
In addition to new delectable dishes, Chef Max has brought back to the table a few of his specials: Moroccan Lamb Shank - Slowly braised with chick peas, potato, carrots and celery, served with Tabule, herbs, almond & couscous. Espadata - Olive’s most popular signature dish that combines fish, shrimps, chicken, mushroom or marinated market vegetable and cottage cheese – on a char-grilled skewer served fresh and hot on the guests table among a host of others. And for dessert – Chocolate Fondant Olive’s signature chocolate pudding with a liquid centre served with home made ice cream and Tiramisu made with in house mascarpone cheese to give you the real taste of this fantastic combination of espresso coffee, rum & fresh home made mascarpone cheese.
